Chocolate Zucchini Cake

This recipe is definitely a summertime favorite around my house, so I thought it would be a perfect one to share with you.  It is also a good way to use up any extra zucchinis you have lying around this time of year.   Confession, I have made this recipe 3 times this summer.  Enjoy!


Chocolate Zucchini Cake

1/2 cup butter
1/2 cup oil
1 3/4 cup sugar
2 eggs
1 tsp. vanilla
2 1/2 cups flour
4 Tablespoons cocoa
1 tsp. soda
1/2 tsp. baking powder
1 tsp. salt
1/2 cup sour milk (may substitute buttermilk)
2 cups grated zucchini
6 oz. chocolate chips

Directions
Cream butter, oil, and sugar, add eggs and vanilla, sift together flour, cocoa, soda, baking powder, and salt.  Mix dry ingredients with creamed mixture, alternating with sour milk.  Add zucchini last.  Pour into a greased and floured 9X13 pan, sprinkle with chocolate chips over top.  
Bake at 350 degrees for 40 minutes.
