Getting Into The Christmas Spirit

Nothing gets me into the Christmas spirit like a Christmas party and last week I went to one.  It was not your run of the mill Christmas party.  In fact Jen, the person who hosted it, probably didn't even think of it as a Christmas party, but I sure walked away from it in the Christmas spirit.  You see Jen is a Stampin Up consultant and she had a few of us over to make a few Christmas projects that I want to share with you.


The first thing we made was this adorable Christmas card.  Isn't it cute!?!  Don't think that snowflake was cut out of silver paper.  It is actually a Coke can.  We just took some tin snips and cut off the top and bottom of the can, flattened it out, then ran it through the Big Shot machine to cut out the snowflake.  You would think that the edges would be sharp but they are not.  The machine crimps the edges a little when you run it through so there are no sharp edges.  What a great way to recycle!


We also put together this little Santa face.  He would look cute on a Christmas card or you could just put a ribbon on him and put him on the tree.


We also did this 6x6 scrapbook page with a Christmas recipe.  Jen has a whole album full of recipe pages.  What a great gift that would make.
 

The recipe is for  Cranberry Pecan Pie.  Jen's mom made this wonderful pie and brought it to share with all of us.  It is REALLY good!  The recipe is pretty hard to read in the picture so here it is.

Cranberry Pecan Pie

Filling:
3 eggs
1 cup corn syrup
2/3 cup sugar
1/4 cup butter, melted
1 tsp. vanilla extract
2 cups cranberries
1 cup chopped pecans

Use pastry recipe or purchased unbaked pie crust for a 9 inch pie plate.  Trim pastry to 1/2 inch beyond edge of plate.  Flute edge.

In a large bowl, combine eggs, corn syrup, sugar, butter, and vanilla until blended.  Stir in cranberries and pecans.   Pour into crust.  Bake at 425 degrees for 10 minutes.  Reduce heat to 350 degrees, bake 35 to 40 minutes longer or until filling is almost set.  Cool completely on a wire rack.  Cover and refrigerate overnight before slicing.  Add a dollop of Cool Whip to each serving if desired and enjoy!


I wish I would of taken a picture of the pie before we cut into it because it was just beautiful with all those red cranberries on top.  The tartness of the cranberries and the sweetness of the pie filling are just perfect together.
